You Look Great Challenge: Alabama's Avocado Pudding Recipe

We are a week into our "You Look Great Challenge," where the goal is to lose 4% of your body weight and you win money! Well I'm a firm believer that what you eat plays a HUGE role in reaching your weight loss goals so I've been eating in (and eating cleaner) instead of eating out and I can already tell a difference in how I feel and I've already lost two pounds! So here are my top go to recipes!

Avocado Chocolate Pudding: This is one of my favorites because I LOVE chocolate and I can eat this guilt free! It's a healthy alternative to what you buy at the store, it's vegan which is a plus and it's a great way to sneak in avocados into your diet without even realizing it! (You actually can't even taste the avocados, they just give it that creamy amazing consistency)

So this one is pretty simple: The base is avocados (I use 2 because I like to make a batch to last a few days), your choice of chocolate powder (I like to use chocolate flavored protein and cocoa powder) and whatever milk alternative you like! (I've made this with almond and coconut milk before and both are great to me)

Here's where you can have fun and play with the recipe to customize it to your taste! If you want it a little sweeter you can ad whatever you use (I like to throw in some honey because the cocoa can be a little bitter) and some other fun ad ins are banana or even almond butter! It still tastes great without the ad ins but I like to play around with it and switch it up every so often.

Then just pop all your ingredients into the blender, mix until creamy, pop into the fridge to cool and you're good to go!

Overnight Oats: This is so easy and such a game changer for work! Typically I'd skip breakfast then by the time lunch comes eat a ton of junk or buy something quick but bad for me on my way to work in the morning so this has solved all my problems! Overnight oats are quick, easy and you can custom these to your taste buds as well!

The base of this is pretty simple - oatmeal and a milk substitute of your choice! Then you can have fun with what you ad in!

I like to experiment all the time with these! So I'll put different protein powders to change up the flavor, you can also throw in a scoop of chia seeds. I also like to try different nuts or sunflower seeds or pumpkin seeds or even dried fruit then I'll top it off with whatever fresh fruit I like!

Here's how to make your life easier for the whole week with these! Mix several jars with the dry ingredients of your choice for the week ahead and then the night before pick which jar you want for the next morning, ad your milk to it, shake it up then top it off with the fresh fruit of your choice! Then in the morning you just grab and go and your breakfast is ready!

I also take a TON of recipes from The End of Dieting which is a book that has completely changed the way I eat! It explains a lot of the science behind why what you eat does what it does to your body, but the recipes are so quick and easy to do and delicious as well!
